Recipe makes 12 Servings

6 medium baking potato, boiled, peeled, and cubed
6 H-E-B Cage-Free Large Brown Eggs, hard-boiled, peeled, and diced
1 cup(s) white onion, chopped
1/2 cup(s) H-E-B Whole Dill Pickle, chopped
1/2 cup(s) red bell pepper, chopped
1 cup(s) H-E-B Real Mayonnaise

Instructions

Place 6 medium size potatoes into a large pot, filled with enough water to cover one inch over potatoes.

Bring water and potatoes to a boil over high heat and cook for 30 minutes, or until they are fork tender.

Drain, rinse, peel and cube potatoes.

Combine potatoes, eggs, onion, pickle, bell pepper and mayonnaise in a large bowl; toss to coat.

Cover with plastic wrap and chill for 30 minutes or more.
