1 Pt organic grape tomatoes, cut in half
1 bag of romaine lettuce
1 English or hothouse cucumber, diced
1 medium red onion, thiny sliced or julienned
1 large green bell pepper, diced
1 cup(s) kalamata olives, chopped
1 block of feta cheese, crumbled
1/2 cup(s) Italian parsley, roughly chopped
1/3 cup(s) fresh mint, chopped
1/4 cup(s) fresh lemon juice
1 Tsp smoked paprika
3/4 cup(s) extra virgin olive oil

Instructions

In a large bowl combine all veggies. Add olives, feta cheese, and chopped herbs. Toss to combine.

For dressing: add lemon juice and smoked paprika, slowly add olive oil while whisking vigorously.
