Italian Sausage and Broccolini Pasta

16 Oz Central Market Occhi di Lupo IGP Pasta di Gragnano
4 Tbsp extra virgin olive oil, divided use
4 garlic cloves, minced
1/2 cup(s) white onions, diced
1 Pt grape tomatoes
1 Lb ground Italian sausage
1 Lb broccolini, chopped

Instructions

Cook linguine according to package instructions, drain and set aside. Toss pasta with a little extra virgin olive oil to keep pasta from sticking to itself.

In a sauté pan set over medium high heat, add oil, garlic and onions and sauté until garlic is just slightly starting to brown.

Add tomatoes and cook for 3 to 4 minutes then add sausage. Stir-fry all ingredients and break apart sausage until sausage is cooked.

Add broccolini and cook for 3 to 4 minutes before adding pasta. Stir to combine and coat everything, season to taste and garnish with shredded Parmesan cheese as desired.

Chef's Note: I like to add a nice pinch of red pepper flakes with the garlic while it sautés to add some spice and depth of flavor.
