Horchata Rice Pudding

Ingredients

Recipe makes 8 Servings

1 cup(s) white rice
1 Qt water
12 Oz evaporated milk
1 cup(s) Kern's Horchata
14 Oz sweetened condensed milk
1/2 Tsp ground cinnamon
1 Tsp vanilla extract
1/2 cup(s) candied pecans, chopped

Instructions

In a sauce pot, at least 2 quarts, add rice and water. Bring rice to a simmer over high heat, then reduce to a simmer and cook about 20 minutes or until rice is tender. Strain remaining water using a fine strainer.

Return rice to pot and add evaporated milk, horchata, sweetened condensed milk, cinnamon and vanilla. Bring to a boil then simmer an additional 20 minutes or until thickened. Once mixture cools slightly it will continue to thicken.

Garnish rice pudding with chopped candied pecans and serve warm or chilled.
