Homemade Blueberry Butter Cake

4 Oz unsalted butter, softened at room temperature
1 1/2 cup(s) granulated sugar
1 1/2 Tsp vanilla extract
1 cup(s) sour cream, or crème fraîche
3 large H-E-B Organic Large Brown Eggs
2 1/2 cup(s) Bob's Red Mill Fine Pastry Flour
2 Tsp baking powder
1 Tsp baking soda
1 1/2 Tsp kosher salt
6 Oz H-E-B Organic Blueberries

Instructions

Preheat oven to 350ºF.

In a stand mixer, cream butter, sugar, vanilla, and sour cream. Add eggs 1 at a time making sure each is fully incorporated before adding additional.

In a large bowl, add flour, baking powder, baking soda, and kosher salt. Whisk to combine.

While mixer is running, add blueberries to wet mixture then add dry ingredients a little at a time until all is incorporated. Turn mixer up higher for 30 seconds until mixture is fluffy.

Pour batter into a greased 9" x 13" oven safe dish and bake 35 to 50 minutes or until a toothpick entered into center of cake pulls out clean. Allow to cool and frost with your favorite frosting.
