3 Tbsp McCormick Organic Basil Leaves
3 Tbsp McCormick Oregano Leaves
2 Tbsp McCormick Garlic Powder
1 1/2 Tsp McCormick Coarse Ground Black Pepper
9 Lb H‑E‑B Prime 1 Beef Ribeye Roast, Bone In ‑ Cut & Tied
2 Tbsp H‑E‑B Select Ingredients Extra Virgin Olive Oil
1 1/2 Tsp H‑E‑B Fine Crystals Mediterranean Sea Salt

Instructions

Preheat oven to 350°F. Mix basil, oregano, garlic powder, and black pepper in a small bowl. Set aside.

Trim excess fat from top of roast, leaving about a 1/4-inch thick layer of fat. Place on a rack in a shallow roasting pan.

Brush oil over roast. Sprinkle with salt then evenly coat with seasoning mixture.

Roast uncovered until internal temperature reaches 130°F for medium-rare (3 to 3 1/2 hours) or 140°F for medium (3 1/2 to 4 1/2 hours).

Cover with foil and let stand 15 minutes before carving. (The temperature of the meat will rise about 10°F during standing.) Serve with Creamy Horseradish Sauce and our Perfect Brown Gravy, if desired.

Chef's Note: Begin checking internal temperature of roast 30 minutes before the estimated end of cook time. The outside of the roast will cook faster than the center. Cook until center of roast reaches desired temperature.
