1 5 Lb bag russet potatoes
1 Tbsp cider vinegar
1 Tbsp salt
1 cup(s) fat free half & half
1 cup(s) Central Market Organics Low Sodium Chicken Broth
2 Tsp black pepper
1/2 cup(s) parsley, chopped

Instructions

Peel, rinse and cut potatoes into 1/3-inch thick slices and place in a large bowl with water.

Bring 8 cups of water to a boil over high heat in a large soup pot and add cider vinegar and 1/2 tablespoon of salt.

Add the potato slices and cook on medium heat for 20 minutes.

Drain the potatoes and keep warm in a large bowl.

Combine the fat free half and half and chicken broth in a large skillet and bring to a near boil over medium heat.

Add the sliced potatoes to the heated broth mixture and mash the potatoes to the desired texture.

Season mashed potatoes with remaining salt and pepper.

Place potatoes in a serving bowl and garnish with chopped parsley.
