Ingredients

1 Tbsp grapeseed oil
1 1/2 cup(s) red onion, finely chopped
2 Tsp fresh garlic, finely minced
2 Tsp Mi Tienda All Purpose Seasoning
29 Oz H-E-B Mexican Style Stewed Tomatoes
4 cup(s) chicken broth
1 cup(s) frozen sweet corn
4 Oz tilapia, cut into small pieces
4 Oz medium shrimp, peeled, deveined and sliced in half
1 cup(s) tortilla chips, crushed
1/4 cup(s) fresh cilantro, chopped
1 large avocado, cubed

Instructions

Heat a large soup pot over medium heat. Add oil, onion and garlic to pan.

Sauté until onions soften, about 5 minutes.

Add seasoning, tomatoes, chicken broth, sweet corn and fish, increase heat to medium high.

Bring to a simmer, cook for 10 minutes, or until tomatoes are soft and fish is fully cooked.

Add shrimp, tortilla chips and fresh cilantro. Stir and simmer 2 to 3 more minutes.

Season to taste with salt & pepper.

Add chopped avocado just before serving.
