Grilled Mango French Toast

Recipe makes 6 Servings

16 Oz mango spears, sliced
2 Tbsp vegetable oil, plus more as needed
6 slices of mango cranberry almond bread, cut into 1/2 inch slices
15 Oz can of coconut milk
4 large eggs
1/4 Tsp kosher salt
2 Tbsp H-E-B Organic Medium Amber Maple Syrup, plus more as needed
1 Tsp vanilla extract
2 Tbsp unsalted butter, plus more as needed for cooking

Instructions

Preheat grill to 350ºF.

Brush mango slices lightly with vegetable oil then grill 2 to 3 minutes per side or until nicely marked. Set aside to cool.

In a flat bottomed baking dish, lay out slices of mango bread.

In a bowl combine coconut milk, eggs, salt, maple syrup and vanilla extract. Whisk until frothy and fully combined.

Pour over bread, soak 5 minutes, then flip bread and soak an additional 5 minutes.

Set a large non-stick pan over medium heat, add butter and allow to melt.

Add custard soaked bread slices, cooking in batches so as to not overcrowd the pan. Cook 3 to 4 minutes per side or until golden brown.

Top French toast with mango slices, and garnish with syrup, butter or whipped cream as desired.
