Grilled Coconut with Melted Chocolate

1 coconut
2 cup(s) semi sweet chocolate chips

Instructions

Preheat grill to 350ºF.

Using back of large knife or rolling pin, break open coconut and pour out water. Break coconut into smaller chunks, scoop out meat and then using knife score flesh of coconut. Set aside.

Grill coconut chunks until they begin to turn brown or a toasted marshmallow color; set aside to cool and cover with foil.

Melt chocolate chips in 30 second microwave bursts to prevent burning, or over a double boiler for about 2 minutes.

Once chips are melted, set aside to cool briefly, then dip each piece of coconut in chocolate; allow to coat and dry in fridge, or dip and eat warm.
