2 Lb H-E-B Texas Roots Fresh Poteet Strawberries, tops trimmed, strawberries cut in half
1 1/3 cup(s) H-E-B Organics Pure Cane Sugar
1 large lemon, approximately 1 tsp zest and 2 tbsp lemon juice
1 Tsp H-E-B Pure Madagascar Bourbon Vanilla Extract
1/8 Tsp H-E-B Fine Crystals Mediterranean Sea Salt, 1/8 tsp

In a medium-sized, heavy-bottom saucepan, add all ingredients and stir to combine.

Bring to a simmer over medium heat and stir intermittently for 10 minutes to make sure nothing sticks or burns.

Reduce heat to medium-low and cook for approximately 30 to 45 more minutes. Do not leave pot unattended as it will boil over. Continue to stir intermittently.

Mixture is ready when liquid has reduced by more than half and resembles a very thick syrup. Turn off heat and set aside for 1 hour to slowly cool.

Place in a jar with a tight-fitting lid and refrigerate for at least 2 hours before using. For best results, refrigerate overnight so strawberries' natural pectin fully gels.

Chef's Note: Spread on toast or bagels, or serve over ice cream or pancakes. Preserves will keep for 3 to 4 weeks refrigerated.
