French Madeleines

Ingredients

Recipe makes 24 Servings

4 large eggs
1 Tsp lemon zest
2/3 cup(s) granulated sugar
2 Tsp vanilla extract
1 1/2 cup(s) all purpose flour
1 Tsp baking powder
1 Tsp kosher or sea salt
8 Oz Plugra European Style Unsalted Butter, melted and set aside, butter should still be warm

Instructions

In a bowl, whisk together eggs, lemon zest, sugar, and vanilla extract until creamy and sugar is mostly dissolved.

Set aside, in a separate bowl sift together flour, baking powder and salt. Combine melted butter, and egg mixture into flour.

Whisk everything together until batter just comes together and is smooth. Place a piece of plastic wrap over batter surface to keep a skin from forming.

Place another sheet of plastic wrap over entire bowl, refrigerate overnight or at least 8 hours. 24 hours will yield best results.

Preheat oven to 375F. Spray a Madeleine pan with non-stick spray.

Scoop out approximately an ounce of batter evenly into Madeleine pans.

Bake for 10 to 15 minutes or until Madeleine's are just lightly browned and puffed up.

Allow Madeleine's to cool slightly before de-panning and placing into a serving basket. Serve while still warm.
