3 Large eggs
2 Tbsp fat free sour cream
2 Tbsp Light mayonnaise
1 Tbsp Fresh chives, chopped
1 Tbsp White onions, chopped
2 Tbsp Unsalted butter
1/2 cup(s) 71/90 cooked, tail-off shrimp, tails removed, shrimp peeled and deveined
1/2 cup(s) Shredded mild cheddar cheese

Instructions

Whip together eggs, sour cream, mayo, chives, and onions.

Melt butter over medium heat in a non-stick skillet; add egg mixture and cook slowly until halfway done.

Place shrimp and half of cheese on omelet; continue cooking until egg is half cooked.
