2 Tbsp oil
6 1/2 Oz cod, cut for fish tacos
3 Tsp less sodium taco seasoning
1 southwest chopped salad kit
10 Oz southwest riced cauliflower, cooked according to package directions
2 Tbsp cilantro cotija salad dressing

Heat a medium pan over medium-high heat with 2 Tbsp of oil. Season cod fillets with taco seasoning, and cook for 3 to 5 minutes, turning halfway through, until cod is cooked through.

Mix salad according to package directions. Add the cooked cauliflower rice to a bowl, top with dressed salad, cooked cod, and a drizzle of cilantro cotija dressing.
