Easy Pork Pho

Ingredients

Recipe makes 6 Servings

1 medium thumb of ginger, peeled and sliced
1 bunch green onions, ends trimmed and cut in half
6 cloves of garlic, smashed
6 cup(s) chicken stock
2 Tbsp fish sauce, plus more as needed for seasoning
2 Tbsp soy sauce, plus more as needed for seasoning
2 Tbsp mirin
12 Oz thin sliced pork milanesa, plus more as needed
16 Oz rice noodles, cooked and set aside

Adjust rack in oven at least 8 inches from broiler. Preheat broiler to high.

Place ginger, green onions and garlic on a sheet pan. Set under broiler for 2 to 5 minutes or until everything is nicely browned (watch constantly to make sure nothing burns).

Place roasted veggies into a pot and add chicken stock. Bring to a simmer and cook 25 minutes. Skim out garlic, ginger and green onions from broth and discard.

Add fish sauce, soy sauce and mirin to chicken broth and bring to a simmer.

Carefully add slices of pork to simmering broth and cook 2 minutes.

Place noodles in each bowl followed by broth and pork.

Garnish with your favorite pho condiments such as basil or cilantro, bean sprouts, cabbage, green onions and sriracha. Season to taste as needed.
