Dover Sole en Papillote with Acai Chipotle and Crispy Onions

1 Lb Dover sole filets
1 Tsp Adams Reserve Asian House Rub, as needed for seasoning
1 Tbsp extra virgin olive oil, plus more as needed
1 Paper Chef Culinary Parchment Cooking Bag, plus more as needed if fillets are larger
1/3 cup(s) Better Way Provisions Acaí Chipotle Dressing, plus more as needed
1/3 cup(s) crispy fried onions, as needed for garnish

Instructions

Preheat oven to 350°F.

Season Dover sole liberally with Asian house seasoning, drizzle with olive oil and place in parchment cooking bag.

Seal up edges of bag, place on a sheet pan and bake 15 to 20 minutes depending on thickness of fillets.

When fish is fully cooked, cut parchment bag in center to open, drizzle with acaí chipotle dressing and garnish with crispy onions.

Season to taste as needed and serve over rice or with steamed vegetables.

Chef's Note: Dover sole is a relatively thin fish and will cook quickly. The longer cooking time is simply to make sure it cooks fully. When done, the center of the fish should read 150ºF.
