Ingredients

Recipe makes 8 Servings

1 1/2 Lb red potatoes
1/2 cup(s) Hellmann's Real Mayonnaise
2 Tbsp Maille Dijonnaise Mustard
1 Tbsp fresh dill, chopped
4 Oz H-E-B Diced Pimentos, drained
1/2 cup(s) green onions, thin sliced

Instructions

Wash and cut potatoes into 1 inch cubes.

Combine potato cubes and 1/2 cup water in a microwave safe bowl.

Loosely cover the bowl with plastic wrap and microwave on high power for 9 minutes or until potatoes are tender.

Rinse the potatoes in cold water and drain; set aside in the same bowl.

While potatoes are cooking, combine mayonnaise, mustard, dill, pimientos and green onion in a large salad bowl.

Add the cooked and cooled potatoes to the mayonnaise mixture. Season potato salad with salt and black pepper and toss to coat.

Cover Dijon Potato Salad and chill for 15 minutes or until ready to serve.
