Demi Glazed Potatoes

1 Lb baby red potatoes
3 Tbsp olive oil
8 Oz mushrooms, quartered
4 thyme sprigs, whole
1 Oz More Than Gourmet Classic French Demi-Glace
1 cup(s) water

Instructions

Place potatoes in a medium size saucepan, cover with water and add in a generous handful of salt. Bring to a boil and cook until potatoes are fork tender. Drain and set aside.

Place oil in a large sauté pan over medium-high heat. Add mushrooms and thyme to hot oil and sauté several minutes until well browned. Add drained potatoes, demi-glace and 1 cup water, stirring frequently to dissolve demi-glace.

Continue to cook several minutes until sauce is reduced and coats potatoes. Season to taste with salt and pepper. Garnish with additional thyme.
