Creamy Chicken Chili Verde

Ingredients

1 Tbsp extra virgin olive oil
1/2 cup(s) sweet onions, finely diced
1 1/4 Lb seasoned diced skinless chicken thighs
1 cup(s) Mi Tierra Tomatillo Sauce
1 cup(s) chicken stock
1 cup(s) Crema Mexicana
15 Oz cannellini beans, drained and rinsed
15 1/4 Oz corn, about 1.5 cups (frozen, fresh or canned)
2 Oz fresh super greens or baby spinach, chopped
1/4 cup(s) fresh cilantro, finely chopped
1 large avocado, cubed

Instructions

Heat a large heavy pot on medium-high. Add oil and onions, and stir and cook 2 to 3 minutes or until onions begin to soften.

Add chicken and stir and cook 5 to 6 minutes or until chicken begins to lightly brown.

Stir in salsa verde, chicken stock and crema. Bring to a simmer and cook 4 to 5 minutes.

Add cannellini beans, corn and power greens. Stir through just to heat and allow flavors to meld, about 3 to 4 minutes.

Finish with fresh cilantro and avocado.
