Classic Chicken Salad with Dried Cherries

1 Lb H-E-B Extra Thin Sliced Chicken Breasts
1/2 Tsp kosher salt, plus more as needed
1/2 Tsp cracked black pepper
1 Tsp coriander
1 Tbsp extra virgin olive oil
1 cup(s) H-E-B Organic Mayonnaise, plus more as needed for creaminess
1/3 cup(s) red onions, minced
1/2 cup(s) celery, minced
1 cup(s) dried cherries, roughly chopped
1/4 cup(s) flat leaf parsley, finely chopped
1 1/2 Tbsp fresh lemon juice

Instructions

Season breasts with salt, pepper and coriander. Add olive oil to a non-stick pan and allow to heat 1 to 2 minutes.

Sear breasts 1 to 3 minutes per side until cooked. Set aside to cool, then chop into smaller pieces.

In a bowl, combine mayonnaise, onions, celery, cherries, parsley, and lemon juice. Mix well and add chicken. Season to taste as needed.

Refrigerate 20 minutes or overnight. This salad can be made a day in advance. Serve salad on favorite bread as a sandwich or on a bead of iceberg lettuce.
