1 cup(s) smoked sausage, chopped small
3 large eggs, whisked together until creamy
1/3 cup(s) green onion, chopped
1/3 cup(s) Colby and Monterey jack cheese, shredded, plus more as needed

Instructions

In a small non-stick pan, add sausage and sauté 3 to 5 minutes or until just starting to brown and renders out a little fat.

Add eggs, and with a spatula swirl into an even layer in pan. Add green onions and continue to slide spatula around edges of pan to keep eggs from sticking.

Once eggs are set enough to slide in pan, add cheese and fold eggs over in half. Cook an additional minute in pan before sliding onto a plate, allow to cool slightly before serving.
