Chicken with Citrus Cilantro Rice

Ingredients

Recipe makes 6 Servings

1 Tbsp pure olive oil
1 Lb chicken breast boneless, skinless, cut into cubes
1 Tsp iodized salt
1 Tsp black pepper
1/2 white onion, chopped
2 garlic, chopped
1 cup(s) brown rice
2 cup(s) water
1/2 cup(s) cilantro, chopped
1 lime, juiced and zested

Instructions

Heat a large pot over medium-high heat and add oil and tilt to coat pan.

Season chicken generously with salt and pepper, add to hot pan and brown on all sides. Remove from pan and set aside.

To the same skillet, add onions, garlic and rice. Cook 4-5 minutes, stirring constantly.

Add chicken back to the pan along with 2 cups water. Bring to a simmer and cover. Reduce heat to low and cook 35 minutes.

Remove from heat, stir in cilantro, lime juice and zest.
