Recipe makes 8 Servings

1 Tsp canola oil
1 Lb freshly ground chicken breast
1/4 cup(s) onion, finely diced
1 cup(s) spinach, chopped
1 stalk celery, chopped
2 cup(s) grapes, sliced in half
1 medium granny smith apple, chopped
1/3 cup(s) mayonnaise
1/8 Tsp kosher salt
1/8 Tsp black pepper

Instructions

Heat a heavy bottom skillet over medium high heat 3 minutes.

Add oil and ground chicken.

Cook 15 minutes or until internal temperature is 165°F.

Set aside and let cool.

Meanwhile, combine onion, spinach, celery, grapes, apple and mayonnaise in large serving bowl.

Stir in cooked chicken and season with salt and pepper.
