Chicken and Asparagus Roll-ups

Ingredients

Recipe makes 4 Servings

1 1/4 Lb H-E-B Extra Thin Sliced Chicken Breasts
1/2 Tsp kosher salt, plus more as needed
1/2 Tsp cracked black pepper, plus more as needed
1 Lb fresh asparagus, skinny asparagus preferred for this recipe
1 large lemon, zest only
2 Tbsp extra virgin olive oil

Instructions

Preheat oven to 375˚F.

Place chicken breasts on a cutting board and season both sides with salt and pepper.

Place 2 to 3 pieces of asparagus, depending on thickness into each chicken breast and roll up tightly.

Repeat this process for each additional breast.

Place rolled chicken onto a sheet pan lined with parchment paper or foil.

Sprinkle each chicken roll up with lemon zest, and drizzle each with olive oil.

Bake for 15 to 20 minutes or until chicken is slightly browned and internal temp reaches at least 165˚F.

Chef's Note: I like to serve mine with Parmesan polenta or mashed potatoes.
