Ingredients

Recipe makes 6 Servings

1 Lb lean ground beef
1 Tbsp Adams Reserve Southwest Rub
27 Oz Cookwell and Company Tortilla Soup
2 cup(s) beef broth
4 corn tortillas, cut into small 1-inch pieces
1 cup(s) shredded 2% milk mild cheddar cheese
2 large Hass avocados, diced
1/2 cup(s) cilantro, chopped

Instructions

Place a large skillet over medium-high heat, add ground beef and break into small bits with the edge of the spoon. Cook about 5 minutes.

Sprinkle southwest rub over beef and cook 2 more minutes or until beef is no longer pink.

Add tortilla soup and beef broth, and bring to a boil.

Stir in tortillas and cheese, and simmer 10 minutes over medium heat.

Garnish with avocados and cilantro.
