Ingredients

Recipe makes 10 Servings

4 baking potato, peeled grated
7 Oz H-E-B Diced Onions
1 1/2 Tsp H-E-B Iodized Salt
2 Tbsp H-E-B Flour
1/8 Tsp H-E-B Black Pepper
2 Tsp chives, chopped
2 H-E-B Large Grade AA Eggs
1/4 cup(s) Hill Country Fare Canola Oil

Instructions

Squeeze liquid out of grated potatoes.

Combine with onion, salt, flour, pepper and chives. Lightly beat the eggs, and stir into the mixture.

Heat a thin layer of oil in a skillet, and spoon in tablespoons of the potato mixture to make medium sized patties.

Brown on one side, turn and brown lightly on the other.

Repeat with the rest of the mixture. Serve with applesauce, cottage cheese, yogurt or sour cream.
