Carmelized Onion, Bacon and Mushroom Grilled Cheese

Ingredients

Recipe makes 4 Servings

9 slices bacon, cooked until crispy, fat resereved
1/2 large sweet onion, julienned
4 Oz mushrooms, rinsed and chopped
4 Tsp unsalted butter, softened
8 slices Naturally Leavened Country White Bread
8 slices of Gouda cheese

Instructions

In a medium sauce pan over medium heat, add 1 tablespoon of reserved bacon fat and julienned onions.

Cook about 20 minutes, stirring occasionally and adding a splash of water when stirring. Reduce heat if necessary. Once browned, season with salt and pepper to taste and transfer to bowl.

Reduce heat in pan and add remaining bacon fat and mushrooms. Cook about 3 minutes or until browned. Add butter if needed.

To make grilled cheese, butter all bread slices on one side. Place one or two slices in new skillet over medium heat. Do not overcrowd pan.

Layer 1 slice of Gouda cheese, a tablespoon of caramelized onion, a spoonful of mushrooms and bacon and another slice of cheese on bread in pan.

Cook 3 minutes covered until browned then top with slices of buttered bread, buttered side out, and flip. Cook 3 additional minutes. Repeat with remaining sandwiches.
