Caramel-Apple Quesadillas

2 small granny smith apple, peeled and cored
2 Tsp lemon, juiced
2 Tsp H-E-B Pure Cane Sugar
1/2 Tsp H-E-B Ground Cinnamon
8 Oz H-E-B Cream Cheese
1/4 cup(s) H-E-B Powdered Sugar
3 Tbsp unsalted butter
1/4 cup(s) Hill Country Fare Pecan Pieces
6 H-E-B Flour Tortillas
3/4 cup(s) H-E-B Sabor Tradicional Cajeta Quemada

Instructions

Chop apples coarsely, and toss with lemon juice, sugar and cinnamon in a large bowl; set aside.

Combine cream cheese and powdered sugar in a separate large bowl, and set aside.

Heat 1 tablespoon butter in a large non-stick skillet over medium-high heat, and sauté apples and pecans about 5 minutes, or until apples are tender; remove from heat and stir into cream cheese mixture, then return skillet to heat.

Melt 1 teaspoon butter in skillet, and place 1 tortilla in skillet; turn to coat both sides; heat tortilla 30-60 seconds, until tortilla is slightly crispy, then remove skillet from heat.

Spoon 1/3 cup apple-cream cheese mixture down center of tortilla; fold tortilla in half to close.

Serve quesadillas warm and drizzled with cajeta or caramel topping.
