Recipe makes 12 Servings

1 1/4 cup(s) cake flour
1 cup(s) bread flour
1/4 Tsp baking soda
1 Tsp baking powder
1 Tsp kosher salt
1/4 cup(s) brown sugar
4 Oz unsalted butter, cut into small cubes and placed in the freezer
1 cup(s) sharp cheddar cheese, shredded
1 cup(s) Smoked, fully cooked ham, chopped small
1 cup(s) Low Fat Cultured 1% Milkfat Buttermilk

Preheat oven to 450ºF.

Mix flours, baking soda, baking powder, salt and brown sugar in a stand mixer or by hand. Mix on low speed to combine.

Add in butter, cheese, and ham, mix to combine with dry ingredients.

With mixer running on low speed add in buttermilk and continue to mix until firm. Dough might be a little dry but should form and hold together when squeezed in your hand.

Remove dough to cutting board and knead slightly, then roll or press out to about a 1 inch to 3/4 inch thick. Using a biscuit cutter, cut out about 8-12 biscuits (depending on the size cutter you are using). Lay them on a sheet pan lined with parchment paper.

Bake 10 - 12 minutes until golden brown and slightly puffy. Cool 10 minutes before serving.
