1 non-stick cooking spray
8 H-E-B® Bake Shop Glycemic Health Bread slices, toasted, 2 slices cubed
1/4 cup(s) H-E-B® Fully Cooked Bacon, chopped
12 Oz asparagus spears, cut in 1-inch sections
6 eggs, large
2 cup(s) fat-free half and half
1 1/2 cup(s) H-E-B Monterey Jack Cheese
1/8 Tsp salt
1/8 Tsp black pepper

Instructions

Preheat oven to 400°F.

Spray a 13 x 9-inch baking dish with non-stick cooking spray and set aside.

Arrange 6 toasted bread slices on bottom of prepared baking dish.

Combine bacon pieces, asparagus spears, egg, half and half, cubed bread and 1 cup shredded cheese in a mixing bowl and season with salt and pepper.

Transfer mixture to prepared baking dish and top quiche with remaining 1/2 cup of shredded cheese.

Bake quiche on center oven rack for 10 minutes then reduce temperature to 350°F and continue baking for 30 more minutes until a knife inserted in the center comes out clean.
