Blackened Salmon Croquettes

Ingredients

Recipe makes 6 Servings

14 3/4 Oz Canned pink salmon
2 Large eggs
1/2 cup(s) Green peppers, diced
2 cup(s) Whole wheat bread crumbs
4 Tbsp Blackened seasoning spice blend
1/4 cup(s) Vegetable oil

Instructions

Combine salmon, eggs, peppers and 1 cup of bread crumbs in a large bowl. Mix very well and set aside.

In a shallow dish mix together remaining cup of bread crumbs and seasoning.

Warm 2 tablespoons of vegetable oil over medium-heat in a non-stick skillet.

Take 2 heaping tablespoons of salmon mixture and form into a patty.

Bread patty with seasoned crumbs and place in skillet. Do not over fill skillet with patties.

Cook on each side until golden brown and add salt.
