10 .6000 Oz Zen Monkey Ready-To-Eat Overnight Blueberry Oatmeal, 2- 5.3 oz. containers
1 cup(s) roasted salted almonds, crushed or coarsely chopped, divided use
6 Oz organic blackberries, divided use
1 cup(s) plain Greek yogurt, plus more as needed
6 Oz H-E-B Organics Blueberries, divided use
1/2 cup(s) toasted sweetened coconut, plus more as needed

Using a parfait glass or any slim tall glass cup, build parfait by adding half of 1 container of oats to bottom of glass followed by a sprinkle of almonds and blackberries.

Next add yogurt, a few blueberries and more almonds. Top with more oats and garnish with coconut.

Repeat process for second parfait. Refrigerate until ready to use. May be made up to a day in advance.

Chef's Note: If you like a sweeter parfait, replace plain Greek yogurt with vanilla yogurt or sweetened whipped cream.
