9 Oz artichoke hearts, canned, drained
5 Tbsp lemon juice, (2.5 oz)
7 cloves fresh garlic, chopped (1.25 oz)
6 green onions, chopped (2.0 oz)
1 cup(s) parsley, chopped (.75 oz)
2 Tbsp oregano, leaves only (0.1 oz)
2 Tsp fresh mint leaves, chopped (0.6 oz)
9 Oz silken tofu
3/4 cup(s) olive oil, (4.5 oz)
3/4 Tsp salt, (0.15 oz salt)

Instructions

Add artichokes, lemon juice, garlic, green onion, parsley, oregano, mint, tofu, olive oil and salt. Blend until very smooth. Adjust seasoning as needed with additional salt and pepper to taste.

Chef's note: This is a very thick dressing, perfect for dipping. For a more liquid dressing adjust texture with a little more olive oil or water.
