Apple Zucchini Latkes with Chive Crème Fraiche

2 zucchini
1 Lb baking potato, peeled
1 cup(s) white onion
2 large eggs, beaten
1 cup(s) matzo meal
1 Tsp kosher salt
1/2 Tsp black pepper
4 Oz sour cream
1 Tsp lemon, zested
2 Tbsp chives, chopped

Instructions

Using a box grater or grating attachment of a food processor, grate onion, zucchini, potatoes, and apple into a large bowl.

Add eggs, matzo meal, salt, and pepper. Mix well.

In a medium skillet over Medium-High heat, add 2 to 3 tablespoons oil and allow it to come up to temperature.

Cook latkes in batches: carefully place spoonfuls of apple zucchini mixture into hot oil and flatten with the back of a spatula or spoon. Do not overcrowd pan.

Cook 3 minutes or until browned, then flip and cook an additional 3 minutes. Drain latkes on paper towels. Repeat until all latkes have been cooked, adding more oil as needed.

Mix crème fraîche, lemon zest, and chives. Serve with latkes. (Latkes can be kept at room temperature for up to 4 hours and reheated in the oven or toaster oven.)
