Air Fryer Garlic Seared Scallops

8 large H-E-B Wild Caught Fresh Colossal Sea Scallops
3 H-E-B Garlic Parmesan Butter Dollops, divided use
1/2 cup(s) panko bread crumbs
1 Tbsp fresh parsley, very finely chopped

Instructions

Place a small heavy pan on wire mesh rack and preheat air fryer on 390ºF for 15 minutes (a small 7 to 8 inch cast iron skillet works well for this).

Meanwhile, gently rinse scallops and pat dry.

After pan has been heating in air fryer for 5 minutes, toss 2 butter dollops in pan and cook 1 to 2 minutes until fully melted. Remove hot pan carefully.

Add scallops, turning over to coat both sides with melted butter, and cook for 5 minutes. Flip scallops and move to one side of pan.

Add remaining butter dollop to pan. Pour bread crumbs in excess melted butter and stir to combine. Return pan to air fryer and cook for 2 to 4 more minutes, depending on size of scallops.

Remove from air fryer and transfer scallops to serving plates. Top with toasted crumbs and parsley. Drizzle with any remaining butter and serve.
