5 Valencia oranges or navel oranges, zest only
2 cup(s) kosher salt

Instructions

In a bowl, combine orange zest and salt and gently massage to break up zest evenly into salt until combined and color of salt is orange.

Place into a container with lid. Allow to sit for at least 30 minutes to allow flavors to set up better.

Chef's Note: The longer the salt sits the more essential oils will penetrate into salt. After a couple of days salt will no longer feel wet and zest will be dried.
