
Short Rib Birria Tacos

Serves 4
Ingredients
- 1/4 cup Avocado oil or olive oil
- 8 oz Fresh mirepoix- carrot celery and onions
- 1 1/2 lb Boneless beef short ribs, approximately 1.33 lbs. to 1.60 lbs.
- 32 oz Cookwell & Company Birria Taco Starter
- 1 cup Fresh cilantro, chopped, plus more as needed for topping tacos
- 6 Street taco tortillas, cooked in a pan or on a griddle then placed in a tortilla warmer until ready to use, plus more as needed
- 1 cup Oaxaca cheese, shredded, plus more as needed for tacos
Instructions
- Set instant pot to sauté setting. Allow to get hot before adding oil and mirepoix. Stir-fry for 3 to 5 minutes then add short ribs and a generous pinch of salt and pepper.
- Stir-fry an additional 7 to 10 minutes or until short ribs are slightly colored. Add Birria taco starter then secure lid on instant pot.
- Set instant pot to meat/stew setting and increase timer to 40 minutes.
- When time is up, carefully release pressure on instant pot. Remove lid and shred short ribs into juice. Add fresh cilantro and season to taste.
- To build tacos, dip each warm tortilla in birria pot juice then add cheese and a little shredded meat.
- Top with any taco condiments desired. Repeat process with each additional taco.
