2 Tbsp extra virgin olive oil
3/4 cup(s) H-E-B Long Grain Brown and Wild Rice
1/2 cup(s) yellow onion, diced
2 peeled garlic, chopped
32 Oz Central Market Vegetable Broth, regular
10 Oz Central Market All Natural Porcini & White Mushrooms with Spinach
2 cup(s) chopped turkey
1/8 Tsp kosher salt
1/8 Tsp pepper
2 cup(s) restaurant style seasoned croutons
1 cup(s) shredded swiss cheese

Instructions

Heat large soup pot over medium heat.

Add oil, rice, and onions and stir-fry for 3 minutes until onions are golden.

Add garlic and stir-fry for 1 minute.

Add vegetable broth and 2 cups water, bring soup to boil, reduce heat to medium-low, and cook for 20 minutes covered.

Add mushrooms, spinach, and turkey.

Increase heat to medium and cook 5 minutes uncovered, add salt and pepper.

Top each serving with croutons and cheese.
