1/2 Lb H-E-B Extra Thin Sliced Chicken Breast
1/4 cup(s) cornstarch
2 eggs, beaten
1/2 cup(s) breadcrumbs
1/2 cup(s) vegetable oil
1 avocado, pit removed
1/2 lime, juiced
4 bolillo rolls, cut in half lengthwise
1/4 cup(s) H-E-B Sabor Traditional Sliced Pickled Jalapeño Peppers
4 slices H-E-B Provolone Cheese
2 Tbsp mayo

Instructions

Season chicken with salt and pepper to taste. Add cornstarch, eggs, and breadcrumbs in 3 separate bowls.

Preheat large sauté pan with oil over medium-high.

Dip chicken in cornstarch, eggs then breadcrumbs.

Pan fry chicken, 2 pieces at a time, until golden brown, about 3 minutes. Repeat until all pieces are cooked. Set aside on paper towels to drain.

In a small bowl, mash avocado with lime juice until it has a smooth consistency. Set aside.

Preheat broiler.

To build sandwich, place chicken on bottom of roll and top with jalapeños and cheese. Place prepared sandwiches, including top of rolls in oven 30 seconds to melt cheese and crisp bread.

Smear avocado mixture and mayo on top of roll and place on cheese.
