12 large very fresh eggs

Instructions

Fill a deep pot half way full of water. At least enough water to submerge sous vide machine to proper fill line.

Submerge sous vide machine according to package instructions. Set sous vide to 148ºF.

Place eggs into vessel with circulator running. Once machine reaches target temperature cook eggs for 1 hour.

While eggs are cooking set up an ice bath. Once eggs are finished place into ice bath and let sit for at least 10 minutes.

Crack eggs for use in ramen, add to avocado toast or shakshuka.
