Orecchiette a la Broccoli Rabe

Ingredients

Recipe makes 4 Servings

2 1/2 Tbsp extra virgin olive oil
1 garlic, sliced thin
1 jalapeno pepper, seeds removed and pepper chopped
2 anchovies in oil
1 1/3 Tbsp salt
3/4 Lb orecchiette pasta
5/8 Lb broccoli rabe, cleaned and chopped
1/2 Tsp black pepper

Instructions

Place olive oil in a large, low-edged pan over medium-high heat.

Sauté garlic, jalapeño and anchovies 3 minutes, careful not to burn garlic. Remove from heat.

Bring a large pot of water with 1 tablespoon of salt to a boil.

Cook pasta according to package directions and add broccoli rabe the last 3 to 4 minutes of cooking time.

Reheat garlic sauce a couple of minutes before pasta is done.

Drain pasta and broccoli rabe with a fine mesh strainer to retain all the florets of the broccoli rabe.

Add to garlic sauce and toss until pasta is evenly coated.

Season with remaining salt and pepper.
