Ingredients

Recipe makes 4 Servings

1 small romaine lettuce, torn or cut into small pieces
1 small jicama, peeled, quartered and thinly sliced
1 small red onion, quartered and thinly sliced
3 large navel orange, peeled, halved and thinly sliced
1 Tbsp lime, juiced
1 Tbsp white wine vinegar
1/2 Tsp H-E-B Iodized Salt
1/2 Tsp H-E-B Black Pepper
6 Tbsp H-E-B 100% Pure Olive Oil
2 Tbsp David Sunflower Seeds

Instructions

Toss lettuce, jicama, onion and oranges in a large bowl.

Combine lime juice, vinegar, salt and pepper.

Pour oil slowly into lime juice mixture while whisking vigorously until dressing is smooth and satiny or emulsified.

Pour dressing over salad and toss lightly.

Sprinkle with sunflower seeds if desired.

Note: Make a simpler dressing by whisking 2 tablespoons lime juice into 1/2 cup Italian dressing.
