Mexican Street Corn Salad with Shrimp

Recipe makes 6 Servings

1 Lb peeled deveined shrimp
4 ears of sweet corn
1 cup(s) red bell pepper, seeded and finely diced
1/4 cup(s) red onion, finely diced
1 medium avocado, cubed
1/2 cup(s) Diablo Verde Creamy Cilantro Sauce
1/4 cup(s) Cotija cheese

Bring 1 gallon of water to a boil over high heat. Boil shrimp for 3 to 4 minutes, or until shrimp turns opaque. Drain shrimp and chill in icy water while chopping the rest of the ingredients.

Cut fresh corn off of cob and add to a large bowl. Add red bell pepper, onion, avocado and sauce to bowl.

Drain shrimp from icy water and pat dry with a paper towel. Add to salad.

Top with cilantro and Cotija cheese. Adjust seasoning to taste with salt and pepper.
