Ingredients

Recipe makes 4 Servings

8 corn, with shucks on
3 Tbsp unsalted butter
1 white onions, chopped
1 tomato, peeled, seeded and chopped
1/2 Tsp H-E-B Salt
1/2 Tsp black pepper, ground
1 Tbsp vegetable oil
1/4 cup(s) H-E-B Evaporated Milk
2 H-E-B Large Grade AA Eggs, beaten

Instructions

Cut corn from cobs, but save cobs and husks.

Put the largest husks into a pan of boiling water to soften.

Heat butter in a pan, add onion and cook until soft.

Add the tomato, salt, pepper and sugar, and cook for 5-6 minutes.

Add the corn, milk and eggs, and cook for 10 minutes, stirring constantly.

Remove the husks from the water and dry; place 3 tablespoons of the corn mixture on the center of each husk, and fold the sides of the husks over to form a small package; tie the packages with string.

Place cobs in the bottom of a pot; Add water halfway up the cobs, then place the humitas on top of the cobs; cover the pot and steam for 40 minutes.
