Recipe makes 8 Servings

12 garlic cloves, smashed
4 serrano peppers, stems removed
1 medium lime, peel or green skin only
1 cup(s) shallots, minced
1/4 cup(s) fresh ginger, minced
20 individual stems of cilantro with leaves
1 stalk of lemon grass, diced, white part only, no green
1 Tsp white pepper
1 Tbsp ground coriander
1 Tbsp ground cumin
1 Tsp kosher salt, plus more as needed

Combine all ingredients together into a food processor and pulse until smooth. Refrigerate and store for up to a week.

Use on recipe calling for green curry paste. This also makes a great meat marinade.
