2 cup(s) Caster Sugar, or fine granulated sugar
4 Oz Unsalted Butter, softened at room temperature
1/2 cup(s) Canola Oil, or any neutral flavored oil like avocado or sunflower oil
1/2 Tbsp Vanilla Extract
1 Tsp Fine Crystals Mediterranean Sea Salt, if using iodized table salt use 1/2 tsp
2 Tsp Baking Powder
1 Tsp Baking Soda
2 large Eggs
2 1/4 cup(s) Cake Flour, sifted
1 cup(s) Unsweetened Cocoa Powder
1 cup(s) Whole Milk, at room temperature
1 cup(s) hot water

Preheat oven to 375ºF. Grease 2 standard cake pans well and set aside.

In a stand mixer, add sugar, butter, oil, vanilla, salt, baking powder, and baking soda. Using the paddle attachment, mix on medium speed until fluffy and creamy, approximately 4 to 6 minutes.

Next, add one egg, and mix well before adding the next. When both eggs have been incorporated, cream the mixture for another 3 to 5 minutes.

While mixture is creaming, sift flour and cocoa powder together in a separate bowl and mix until completely incorporated with no lumps remaining.

Once butter and sugar mixture is creamy and fluffy, turn mixer to low speed. Alternating, slowly add milk and flour mixture until both flour and milk are fully incorporated.

Scrape down sides of bowl as needed. Turn mixer up to medium-low speed then add hot water to batter in a very slow, thin stream until fully incorporated.

Divide batter evenly between the prepared cake pans. Bake for 30 to 40 minutes or until a toothpick inserted in the center of each pulls out clean.

Cool cakes completely before removing from pans. Glaze with your favorite frosting. Cut and serve.
