Cranberry Sweet Potatoes

2 Lb sweet potatoes, washed and dried
6 Tbsp unsalted butter
1/4 cup(s) brown sugar
12 Oz fresh cranberries
1/2 cup(s) orange juice

Instructions

Prick potatoes on each side in 4 places with a fork.

Place potatoes in microwave-safe dish; cover with lid or paper towel. Microwave on high 6 to 8 minutes or until done.

Let potatoes cool; then peel and cut into bite-size pieces.

Melt butter in 4-quart pot over medium heat; stir in brown sugar to dissolve.

Add potatoes, cranberries and orange juice. Toss to mix. Stir gently and heat until cranberries begin to pop open and potatoes are hot.
