Ingredients

Recipe makes 16 Servings

4 1/2 Oz confectioners sugar
4 1/2 Oz all purpose flour
4 Oz butter, softened
2 Oz egg whites
3 Oz honey
1/4 Oz vanilla extract

Instructions

In a medium mixing bowl, add all ingredients including a pinch of salt. Mix until batter is smooth then rest at room temperature for 20 minutes.

Using an offset spatula, spread a thin layer of batter in 3 x 5 inch rectangles on a parchment lined baking sheet.

Bake at 375°F for approximately 12 minutes, or until a light golden brown. Remove from oven and let sit for 2 minutes.

Use a spatula to remove the cookies then roll around a wooden dowel (the handle of a wooden spoon works well too) and allow to cool.

As the cookies cool, they get crisp. Remove from dowel and place seam-side down to set up.
