1 Lb H-E-B Natural Boneless, Skinless Chicken Breasts
2 Tbsp H-E-B Select Ingredients Extra Virgin Olive Oil, divided
1 Tsp lemon(s), zested
1 Tsp H-E-B Organics Thyme, chopped
1/4 Tsp H-E-B Pure Ground Black Pepper
1 shallot(s), minced
1 fresh garlic clove(s), minced
1 cup(s) dry red wine
2 Tbsp H-E-B Organics Morello Cherry Preserves
1/2 cup(s) frozen cherries
1 Tbsp lemon(s), juiced
1 Tbsp H-E-B Select Ingredients Sweet Cream Salted Butter

Instructions

Pound chicken to an even thickness. Drizzle both sides with 1 Tbsp. olive oil, lemon zest, chopped thyme, and black pepper.

Heat a large skillet over medium-high heat. Add seasoned chicken to the pan. Sear for 3 to 4 minutes per side. Remove from pan, cover with foil, and set aside.

In the same pan add remaining olive oil and shallots. Cook shallots for 2 to 3 minutes until tender and lightly browned. Add in garlic, wine, and cherry preserves. Allow the sauce to come to a simmer and reduce by half.

Add in frozen cherries and cook for 3 to 4 more minutes.

Remove from heat and add butter and lemon juice. Stir, then spoon over chicken.
