Marinated Tomato And French Bean Salad

Ingredients

Recipe makes 12 Servings

1 1/2 Lb French style green beans, ends trimmed
1 1/2 Lb roma tomato, quartered
4 1/2 Tbsp red wine vinegar
1/4 cup(s) extra light olive oil
1/2 Tsp salt
1/2 Tsp black pepper
1 Tbsp Dijon mustard
1 Tbsp sugar
2 H-E-B® Peeled Garlic, minced
1 small red onion, sliced thin
12 endive

Instructions

Steam green beans, removing lid every 3 to 4 minutes.

Once green beans are tender, rinse in cold water to stop cooking process.

Place drained green beans and sliced tomatoes in a large glass bowl.

Place red wine vinegar, olive oil, salt, pepper, mustard, sugar, garlic, onion and endive in a quart-size glass jar with screw-top lid.

Shake jar vigorously until well mixed.

Pour dressing over the green beans and tomatoes.

Gently toss until the vegetables are mixed and coated with the dressing.

Cover with plastic wrap and chill.
